Printable Recipe

3 cups zucchini, chopped
1 cup chopped onion
2 cloves garlic, minced
2 tablespoons olive oil
4 eggs, lightly beaten
½ cup grated Parmesan
½ cup shredded mozzarella
½ teaspoon dried basil
½ teaspoon salt

     Preheat oven to 350°F.
     In a large skillet, saute the zucchini, onion and garlic in olive oil over medium heat until tender, about 15-20 minutes.
     In a large bowl whisk together the eggs, Parmesan, mozzarella, basil and salt.  Stir in the zucchini mixture.
     Pour mixture into a greased 1 quart casserole dish.  Bake 25-30 minutes or until lightly browned and set.

Serves 4-6.
