Printable Recipe

¼ cup butter, melted
¼ cup olive oil
2 teaspoons salt
1 teaspoon pepper
2 lbs baby carrots

     Preheat oven to 425°F.
     Combine butter, olive oil, salt and pepper in a medium bowl. Stir to combine.  Add carrots and toss to coat.
     Transfer carrots to an ungreased shallow baking sheet.  Spread out in a single layer.  Bake for 30 minutes or until carrots are tender, stirring ½ way through baking.

Serves 4-6
