Printable Recipe

4 slices bacon, cut into 1" pieces
1 lb lean ground beef
½ cup chopped onion
1 small green bell pepper, chopped
2 cloves garlic, minced
2 cups water
1 cup long grain rice
1 (14.5 oz) can diced tomatoes, undrained
1 (15.5 oz) can black beans, drained and rinsed
1½ teaspoons dried Italian seasoning
1 teaspoon salt
1 cup shredded mozzarella cheese

     Cook bacon in large skillet over medium heat until crisp.  Add ground beef, onion, bell pepper and garlic.  Cook until beef is done, stirring frequently.
     Add water, rice, tomatoes, black beans, Italian seasoning and salt.  Mis well.
     Reduce heat, cover and simmer until liquid is absorbed and rice is done - about 20 minutes.
     Sprinkle with mozzarella.  Let stand until cheese melts. 

Serves 4-6.
